World Records: Mexico Makes 240-Foot enchilada

Officials in a Mexico City borough said 600 residents made it into the Guinness Book of World Records by creating the world’s largest enchilada.

Guinness officials said the Iztapalapa borough’s enchilada, measuring 230 feet, 12 inches in diameter, beat earlier attempts elsewhere in the country and in the United States, La Jornada reported Monday.

You gotta love an enchilada that can feed an entire town! I think I know what I am going to have for lunch today!
